Set & Forget Corned Beef

Corned Beef is one of the simplest dishes to make, and is always a favourite served with veges and a cheesy parsley sauce.

The good thing about this recipe is that you don't have to worry about varying the cooking time with the size of the piece of beef.  Just let it simmer away for 4 hours, turn off the heat and let the beef cool in the cooking liquid for best flavour.

Set & Forget Corned Beef

A lump of corned beef, any size

1 or 2 onions, cut into quarters

1 or 2 carrots, cut into quarters

3-4 bay leaves

a few whole cloves

about 10 peppercorns

1-2 tablespoons of brown sugar

1-2 tablespoons of apple cider vinegar

Water to cover

 

Put everything into a saucepan and cover with tap water.  Cover with a lid.

Bring to the boil, reduce heat and simmer for 4 hrs, topping-up water as required.  Turn off and allow to cool in the cooking liquid.

Serve hot or cold.
