Corned Beef Fritters

We eat a lot of silverside. It is a delicious meat hot with white sauce, mashed potatoes and veges, and makes for great cold meat. Fresh bread, butter, pickles and corned silverside and you have a delicious sandwich. Another great way to eat corned beef silverside is fritters; he kids love them and you can also load them up with veges.

This is the basic recipe we use but we always add in corn, grated zucchini and sliced shallots.

Corned Meat Fritters

1 cup SR Flour

1 egg

¾ cup milk

½ cup grated cheese

200g cold corned beef

Salt & pepper to taste

Method

  1. Combine the flour, egg and milk to make a batter.
  2. Add the cheese and corned beef, combine together and season to taste.
  3. Pour some vegetable oil in a frypan (enough to shallow fry).
  4. Once oil is hot, spoon dessert spoon size portions of batter into the pan.
  5. Flip the fritters when they are nicely brown on the bottom, they are ready when all the batter is cooked through.
